Later on in the episode, we hear from Vicky Wass who is an expert on all things eggs, and integral in establishing The American Egg Board.  Vicky has a 40 year history working in the food industry with her focus on eggs, and in her last position prior to retiring she held a position in food service sales at Michael Foods’ for 34 years.  She has a wealth of information regarding eggs, their health benefits, and what products are available for use in our own homes!
